Our Standards
Our cattle are processed at a local USDA inspected facility, located just 30 miles from our Farm. After dry aging for 14 days the beef is custom cut, packaged, and ready for pickup.
The cost for our spring and fall beeves are $4.25 per pound on a hanging weight of approximately 450 (full) 225 (half) pounds depending on the animal, plus approx. $.89 per pound processing fee and taxes. (The hanging weight is the weight of the carcass before dry aging, deboning and trimming and not the final weight of usable beef.) If you would like to split a side with a friend the beef will be split into 2 equal parts. A side will take about 6 cubic feet of freezer space. The actual size and portions of beef cuts vary depending on the animal.
